(with Banana Honey Spice Cake)

1 cup honey
2 large egg whites, room temperature
1/4 tsp. salt
1 tsp. vanilla extract

  • In a small saucepan on the stove or in a measuring cup in the microwave, bring the honey to a boil.
  • In a large bowl, beat the egg whites until stuff, add the salt, and slowly drizzle in the boiling honey in a steady stream. Beat continuously for several minutes until the frosting thickens.
  • Add the vanilla and continue beating until the frosting becomes very thick. Use immediately or store in the refrigerator for later use. Frosts 3 10" layers.
