Dal (thing)

Indian split peas. Some varieties of dal, fried in small quantities, are used as seasoning, as if they were a spice. Some types of dal:

• Chana dal: yellow
• Masoor Dal: red
• Mung dal: made from mung beans
• Toovar dal: larger & yellow
• Urad dal: pale yellow, whitish, viscous (when cooked, of course)
