Satay is a pan-Asian food which consists of small marinated strips or cubes of beef, pork, chicken, or fish threaded onto bamboo skewers and grilled, barbecued or broiled. It's usually served with a spicy peanut sauce and, in much of Southeast Asia, cucumber salad. Japanese yakitori is similar. Satay is classic street food, sold as a snack, but can also be served as an appetizer.

There are probably as many recipes for satay marinade as there are cooks in Asia. This is what I use to marinate about 1 pound (450 gr) of chicken breast or pork or beef tenderloin, sliced into thin strips:

Combine the marinade and the meat and let it sit for 2-12 hours in the fridge. Wnen you're ready to think about cooking, soak bamboo skewers in water for about 30 minutes; this will discourage them from burning and also make the meat slide off more easily. Thread the meat onto the skewers, cook in whatever way you can (barbecuing works best, but broiling is just fine) for no more than 2 or 3 minutes per side.

Serve with saté sauce, peanut dressing, peanut and sesame sauce, or something similar, and try it with cucumber salad as well.
