First off, if I could figure out how to get these, I would have
serious issues with my mostly vegetarian
eating habits because they are the best in the vietnamese soup
pho bo which is in fact beef-based.
Oh, the noodles! They are white flat noodles, cut as wide as they need to be from sheets that look like
folded pillowcases. You can get them dried, but it's well worth finding the
fresh. You can also find precut, but don't expect to find it easily. A few names to look for:
he fen (Mandarin),
hor fun (Cantonese) or
pho (Vietnamese).
To Cook: Slice them the required width and pour boiling water over to cover. Gently pull noodles apart with chopsticks, drain, rinse, and slide into your soup.
