Dungeness Crab (idea)

The Dungeness crab got its name from the town of Dungeness, Washington, where it was first harvested; in fact, it was the first commercially harvested shellfish on the North Pacific coast.

Here are some other Dungeness crab factoids:

• The annual total crab production from the Pacific Northwest region (British Columbia, Canada, and the states of Alaska, Washington, Oregon, and California) averages 38.5 million pounds.
• Prices typically fluctuate between $1.00 and $3.00 per pound.
• Dungeness crabs are about 20%-25% meat by weight. The rest is exoskeleton (and horrible, horrible entrails.)

So, essentially, every year people spend from 26 to 80 million dollars on crab exoskeleton and entrails. The rest of the beast is awfully tasty, though.
