Tempura Batter
1 egg, beaten
1 cup ice cold water
1 cup flour
2 tablespoons dry white wine (optional)
Whisk together. The batter should be lumpy.
Dip something in the batter and deep-fry it.
Dust vegetable slices in flour before dipping them in the batter.
You can make a dipping sauce from
dashi,
mirin,
sake,
soy sauce and
ginger, or just use plain soy sauce.
