Ingredients:
1 one-pound can of
great northern beans, rinsed and drained
2 Tbs finely chopped
onion
2 Tbs sweet pickle
relish
1/3 cup finely chopped
celery
1 Tbs + 1 tsp
mayonnaise
1 dash
garlic powder
Salt and
pepper to taste
Preparation:
Place beans in a medium bowl and mash them with a fork. Add remaining ingredients and mix well. Chill several hours to blend flavors.
Notes:
You can add or omit most ingredients to match the way you like your (mock) tuna salad. The mashed beans function as the tuna. It really is much better if you let this salad sit in the fridge for a few hours to let your ingredients get acquainted.
