A
gibnut is a
rodent that lives in the
rain forest, roughly equivalent to a rat. It can grow quite large, up to 2' with tail. Living on the forest floor, this
solitary animal eats leaves, fallen fruit and
tubers dug from the ground. It is the most prized game animal of
Belize, and is considered quite the
delicacy in
Central America.
But, I personally wouldn't order gibnut, delicacy or no.
It's
rat.
