Celebrated annually on the 25th of January, the anniversary of the birthday of Robert Burns. There's a loose itinerary, revolving around the Burns supper; it begins with a grace, something like Burns'

Some hae meat wha' canna eat
And some would eat that want it.
But we hae meat and we can eat,
Sae let the Lord be thankit.

Dinner begins, and soon the mighty Haggis is paraded in; Burns' Address to a Haggis is read, and the Haggis is ceremonially cut and eaten, along with much whisky (enough to convince yourself that you're not about to put sheep lung into your mouth).

The rest of the night...well, in true honor of Burns' life, revolves around booze, women, and poetry. You can be as formal or informal as you want; everybody from pretentious academics to solid drunkards can play. The only rule I follow is that nobody gets a dram until they've finished reading a poem.
