Here is my favorite thing to eat for breakfast (when I actually have the time to make it).

For each sandwich you'll need:

2 eggs
2-3 slices of quality turkey breast (Smoked is best)
2 slices of sourdough or buttermilk bread
1 tbsp bluecheese salad dressing
2 tbsp freshly grated parmesan cheese
Salt and freshly-ground black pepper to taste

Preparation

Beat eggs in small bowl until completely homogenous. For light, fluffy eggs, beat in a small amount of water, for richer, heavier eggs, beat in some milk.
Add salt and pepper to taste. Go light on the salt, as parmesan cheese is rather salty.
Spray a small skillet with non-stick cooking spray.
Heat the skillet.
Scramble the eggs in the skillet until cooked to your preferred doneness.
At this point, I take the skillet off the stove and cover it because I'm not talented enough to toast bread and fry eggs at the same time.
Toast the bread.
Smear the bread with the bluecheese, then add the eggs, then the parmesan, and then top it off with the turkey and the other slice of bread.

The bluecheese and the parmesan really complement each other well and give the sandwich a complex taste that goes really well with the turkey and eggs.
