Vegan Corn Sticks

Everybody loves these, and they're easy and reliable. I make them in cast iron corn stick pans (this is a cast iron baking mold which would make 7 corn-on-the-cob shaped breads), but you could use an 8" square pan or thereabouts, and just watch the cooking time. I buy flax seed in a health food store and grind it as needed in a coffee grinder I use for spices.

Preheat oven to 400F. Grease pan(s) with shortening or oil, or spray with oil cooking spray. Combine dry ingredients. Mix in oil and water just until moistened. Bake 20-22 minutes, until lightly browned. Makes 14 corn sticks. Serve hot, or toast to reheat.
