chicken recipe:
INGREDIENTS
4 chicken breasts
1 cup tortilla strips (or chips)
1/2 cup ranch dressing
1/2 cup salsa
1 cup various cheeses (jack, cheddar)
Marinade
1/3 cup teriyaki sauce
2 tsp. lime juice
2 tsp. minced garlic
1 tsp. mesquite liquid smoke
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 cup tequila
Pico de Gallo
3 cups diced tomato
1/2 cup diced red onion
1/4 cup fresh cilantro, minced
2 Tbs. canned jalapenos, minced
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. granulated garlic
3 Tbs. salad oil
3 Tbs. white vinegar
DIRECTIONS
- Combine the marinade ingredients and marinate chicken breasts for 2-3 hours in refridgerator.
- Prepare the Pico de Gallo, stir well, and refrigerate.
- Combine the Ranch dressing and Salsa in a small bowl. Stir well.
- Cut about 2 tortillas into strips an inch wide and 3 inches long. Deep-fry briefly in hot oil until they turn crunchy and brown. Let drain on paper towels.
- Grill the marinated chicken until cooked through.
- Preheat the oven to 350F. Create a bed of tortilla strips, place the grilled chicken on the bed. Spoon the ranch dressing/salsa mixture over each breast, and top each breast with a quarter cup of cheese. Bake for about 10 minutes, or until the cheese melts and bubbles.
Top with Pico de Gallo and serve with Margaritas and Mexican rice.
