A seed butter, sunflower butter is like peanut butter, except, obviously, that it contains ground sunflower kernels instead of nuts. It lacks the natural sweetness found in most nut butters, and is slightly bitter. Personally, I think of it as a savory, rather than sweet, flavor.

The higher oil content results in a softer consistency than peanut butter. The oil does not seem to separate out as much as it does in peanut butter, however. Since sunflower oil contains moderate amounts of vitamin E, so does sunflower butter.

Admittedly, it has a less than appetizing grey color. Still, it is an interesting alternative to peanut butter.
