Meat is at a premium among the peoples of the Arab world, so generally speaking every part of the animal is consumed. This includes sheep testicles, which I tried in a somewhat upscale Cairene restaurant once. The texture reminded me of tongue, or perhaps kidney, smooth and not at all stringy, although a bit gritty in parts. The taste wasn't too remarkable, but neither was it by any means unpleasant: underneath the peppery sauce they tasted like meat, kidney being again perhaps the best comparison point. The most disturbing part was the arrival of the order, since the slices were arranged so that you could still see the outline of the balls.
