My favorite red chile is from New Mexico. Red chile is green chile in a more mature form. It can be strung together in a bunch called a ristra and dried and then later ground into a powder and used to make red chile sauce. Saute red chile powder in a pan with butter. Then add water, cumin, garlic and salt. Simmer for a while. Pour it over eggs, tamales, enchiladas, or anything else you can think of.
