A good recipe for pico de gallo is as follows:
- 1/2 kg diced ripe tomatos
- 1/2 cup chopped white onion
- 1 cup fresh cilantro leaves
- 4 large fresh serranos or jalapeno peppers chopped fine, seeds and all
- 1/2 cup ice water
- salt to taste
- fresh lime juice to taste
Mix all veggies and herbs with the ice water, add salt and lime juice.
Stir, but not too much - this salsa is almost a relish and should be
kept crisp, never mushy. Good with everything.
