The first noder has forgotten (or, *shudder*, never learned) the two most important ingredients in matzo brei that lifts it above mere Jewish french toast (Dreyfuss Toast?): Namely, cinnamon and red wine, which should be added to the mix of eggs, milk, matzo, etc. One year in college, I made it and didn't have any red wine available, but an upperclassman kindly provided me with some rum instead. It proved to be an excellent substitution.
