A tasty Greek
sausage, pronounced loo-kah-NEE-kah.
This sausage is made from lamb, pork, and orange rind, red wine, garlic, majoram or thyme, allspice or coriander seeds, bay leaf, and black pepper.
The ingredients are finely ground and mixed, and forced into medium sized casings, forming links. The sausages are then poached in water, and cooled for sale or later use.
