Linguica is a much-loved Portuguese pork sausage, similar to the choricio (aka chorizo).

The pork of the linguica is coarsely-ground butts, and is seasoned with a hit of garlic, cumin seeds, and aromatic cinnamon. The sausage meat is cured in a vinegar pickling solution, and then packed into casings, hung, and smoked.

Linguica is often used as an ingredient in soups and thick stews, and is also an excellent addition to pizza or an antipasto selection.

The linguica is also known as the longanzia.
