Leberkäse (pronounced LAY-ber-kah-zuh) is a meatloaf, pinkish in colour, made of pork, beef, and veal. It has the soft and fine texture of a good bologna sausage (that is, very easy to slice, and if particularly fresh, almost spreadable).
The loaf is seasoned with "Bavarian" spices (brown mustard, rosemary, garlic, sage, thyme, and bay leaf), and generally cut thickly and fried, to be served with potatoes and fried onions.
