'Hunt and peck' is the typing system employed by inexperienced typists. In contrast to Touch typing, this technique involves no knowledge of the location of keys, although said knowledge makes typing much faster.
Basically, you stare at the keyboard ('hunt' for the keys) until you find the key you want. You then jab at the key from your hands-back position (Required so you can see the keys), quite like a chicken eating something on the ground (Hence the 'peck').
With some experience, you can get to know the locations of the keys and start looking at the keyboard less and less. Then you can switch round your keycaps to confuse people.
