First off, if I could figure out how to get these, I would have serious issues
with my mostly vegetarian eating habits
because they are the best in the vietnamese soup pho bo
which is in fact beef-based. Oh, the noodles!
They are white flat noodles, cut as wide as they need to be from sheets that look like folded pillowcases
. You can get them dried, but it's well worth finding the fresh
. You can also find precut, but don't expect to find it easily. A few names to look for: he fen
(Mandarin), hor fun
(Cantonese) or pho
To Cook: Slice them the required width and pour boiling water over to cover. Gently pull noodles apart with chopsticks, drain, rinse, and slide into your soup.
