Canola is a genetic variation of the oilseed called rapeseed. It was developed by Canadian plant breeders specifically for its nutritional qualities, particularly its low level of saturated fat. Canola has the lowest level of saturated fat of any edible oil. For obvious marketing reasons, the name was changed to Canola, derived from CANadian and OiLseed. Canadian farms grow over C$2 Billion worth of Canola yearly, and much of it is exported to the United States.
