Vulscombe is an English goat's milk
cheese produced by Joyce and Graham Townsend
. The cheese is unrennetted, and the extreme acidity of the Townsend's goats is adequate to seperate the curds
from the whey
The soft cheese, with a fat content of 45%, is made into small round truckles and presented with a bay leaf or with crushed peppercorns. The flavour is said to have a hint of lemon. It is matured for one to three weeks before consuming.
