As an aircraft specification "Vs" indicates the stall speed of the aircraft. For hang gliders, Vs varies with load, so Vs is usually given for maximum wing loading. The "V" stands for velocity, and is used for several other specs: Vne, Va, and Vd.
An acronym standing for "Very Superior" qualifying cognac as having aged in oak barrels for at least 2.5 years, just like * * *, three stars. Youngest of cognacs, younger and cheaper than VO / VSOP.
