Trout Wellington is a delicious main course of the Pacific Northwest. It's also very easy to prepare, especially if you have puff pastry preprepared, which I generally do.

Ingredients to serve appx. 4 people

Preheat the oven to 400 °F. Saute the lemon juice, pepper, and shrimp in the butter for about 4 minutes. Add the sherry and let that heat for about thirty seconds. Then put those ingredients in a food processor and smooth to a paste. Add the whole capers.

Place the trout on a buttered baking sheet or pan. Spread the paste on them. Cover each filet with a thin layer of the puff pastry and tuck in the sides under the filets. Brush each filet with egg. Bake for 30 minutes.
