It's not sashimi. But it's sashimi in style.

This should make four servings.

What You Will Need
4 medium ripe roma tomatoes
4 tbs. fresh lime juice
2 tsp. shoyu (soy sauce)
pinch of sea salt
1 tbs. wasabi powder
12 sprigs of watercress

What To Do Now
Bring a large saucepan of water to the boil and plunge the tomatoes in for just a moment. Rinse them under very cold running water and peel them. The skin should come away very easily.

Cut the tomatoes into quarters, and remove the seeds. Slice each quarter into very thin wedges. Cover and chill for 30 minutes.

Mix the lime juice, shoyu and salt in a small bowl.

In another small bowl, combine the wasabi with just enough water to form a dough-like paste. Mold the paste into four small pyramid shapes.

Divide the tomato slices among four small plates. Top each with three sprigs of watercress. Place a wasabi pyramid on one of the sprigs. Drizzle with the lime sauce on the side of the dish so that it forms a pool. Serve immediately.
