Tequila Marinated Grilled Shrimp
2 pounds fresh large shrimp, peeled and deveined, leaving tails intact
1/4 cup olive oil
5 cloves garlic, crushed
1/4 cup tequila
1/4 cup fresh lime juice
2 tablespoons snipped fresh cilantro
1/4 teaspoon coarse salt
1. Combine all ingredients in a medium-sized bowl. Allow the shrimp to marinate for at least 30 minutes.
2. Grill shrimp on the rack of an uncovered grill directly over medium-hot coals for 10 to 12 minutes or until opaque, turning once halfway through grilling time and brushing with sauce the last 2 minutes of grilling.
This recipe is great to serve during summer dinners and parties
. They require very little effort, but look and taste wonderful. The preparation can all be done several hours ahead of time and then grilled when you are ready.
