Stuvede Kartofler (Potato-White Sauce) is a traditional Danish dish that is rarely eaten anymore, as most children find it icky.

The recipe is as follows:

Boil the potatoes as usual, then let them cool off. When cold, cut the potatoes in small pieces.

Melt the margarine in a pot and add the flour while stirring. When it is a dough-like substance, add milk slowly, while stirring. Add the potatoes carefully, and then add the parsley, as well as salt & pepper.

Serve the potato-white sauce with stewed pork, sylte/head-cheese, frikadeller/swedish meatballs, herring or medisterpølse.
