You will need
Cook the cauliflower florets in boiling salted water for about 5 minutes - they should retain their crispness. Drain well.
Butter a small shallow dish and place cauliflower in the bottom.
Put the mayonnaise, mustard and lemon rind in a medium bowl, stir in the egg yolks and 25g of the grated cheese. Season with salt and pepper to taste.
Put the egg whites in a seperate bowl and whisk until stiff. Fold the egg whites carefully into the mayonnaise mixture.
Spoon this mixture over the cauliflower, sprinkle with the remaining cheese and bake in the oven at 190C/375F/Gas mark 5 for 25 minutes, or until risen and golden.
