This dish is a meal on its own and is very quick and easy to prepare.

Ingredients

Serves 4

  • 8 slices white bread lightly buttered and cut diagonally in half.
  • 6 rashers bacon cooked and cut into small squares
  • 2 onions, diced
  • 6 oz tasty cheddar cheese, grated
  • 1 pint milk
  • 3 eggs
  • ground pepper

Method

  1. Beat the eggs into the milk with a fork
  2. Arrange half the bread to cover the base of an oven-proof dish
  3. Sprinkle on half the bacon, onions and cheese
  4. Add a second layer of bread
  5. Top with the remaining bacon and onion
  6. Pour on egg and milk mixture, lifting the edges of the second layer to ensure it reaches the bottom
  7. Gently press down the bread into the egg mixture
  8. Add ground pepper to taste
  9. Top with remaining cheese
  10. Bake in an oven preheated to 350F for 40 minutes or until the whole thing is puffed up and just solid and cheese is meted and golden.

Note: Do not add salt to this dish, as the bacon will contain enough salt to season it.
