Sausage Tortilla Rolls

Makes about twelve servings


Preheat the oven to 375 degrees and grease a 13x9x2 baking dish. Break up sausage meat, sauté slowly until brown. Drain off the fat. Place the sausage in a large mixing bowl and add the cottage cheese, onions, olives, flour, and 1/2 cup of the cooking sauce.

Spoon the mixture into the tortillas (1/3 cup into each) and spread over the tortilla. Roll the tortillas up jelly roll style and place, seam side down, into the baking dish. Spoon the remaining cooking sauce over the tortillas.

Bake 15 minutes or until bubbly. Sprinkle the cheese in a ribbon over the sauce. Bake 10 more minutes or until the cheese melts. Garnish with sliced olives if desired.
