Plantain Custard Ring
Ingredients:
- 1 pound plantain leaves
- 2 tablespoons butter
- 3 wild onions, finely chopped
- 1 pound ground beef
- 1 can tomato soup
- Potato chips
Preheat oven to 350 degrees. Clean and rinse the plantain leaves under running water. Discard all brown or bruised leaves. Put a 10-inch skillet over high heat and add the butter. When the butter has a nutty smell, add the onions and brown slightly. Turn the heat down to medium and add the ground beef. Brown slightly with the onion.
Line a 3-quart greased casserole with plantain leaves. Add a layer of the meat, another layer of plantain leaves, and then more meat. Continue until all the ingredients are used, finishing with a layer of plantain leaves. Pour the tomato soup over the greens and, if you wish, sprinkle with crushed potato chips. Bake for 2 hours. Serves six
