A recommended recipe for Paua fritters, taken from "A Taste of the Sea" by Sue Miles


2 Paua
1-2 tbsp flour
2-3 eggs
A dash of milk
3 tsp minced onion
Salt & Pepper


Mix flour, salt and pepper. Add egg and milk and stir well to make a liquid batter (rather than a creamy-smooth one). Put Paua and onion in the mixture and blend in a kitchen whiz. Put spoonfuls in hot oil to brown, turning once. Serve with wedges of lemon, thin bread and butter, and cucumber salad.
