Kit's Mom's Oven-Fried Chicken

  • 1/2c butter, cubed
  • 1/2c flour
  • 1t salt
  • 1t paprika
  • 1/2t black pepper
  • 3lb chicken pieces (Use whichever cut pleases you - I prefer breasts and thighs, myself.)

Preheat oven to 425F.

Melt butter in a 9x13x2in baking pan in oven.

Mix flour, salt, paprika, pepper in a plastic bag.

Dredge each piece of chicken in flour mixture, one at a time. Just drop it in the bag and shake it around.

Arrange chicken pieces in baking pan.

Bake 30min, uncovered.

Turn chicken.

Bake 30min longer, or until largest piece reaches internal temperature of 165F.

Serves 6, unless you're greedy like me, in which case it serves 4.
