Serves 2
  • 2 tablespoons butter
  • 1 finely chopped small onion
  • 50g sliced button mushrooms
  • 2 tablespoons snipped fresh chives
  • 2 tablespoons bean sprouts
  • 2 teaspoons soy sauce
  • 3 eggs, separated
  • 2 tablespoons water
  • salt and freshly ground black pepper to taste

Microwave the butter and the chopped onions on High for 2 minutes. Stir in the mushrooms and microwave on High for a further 2 minutes. Stir in the Chives, bean sprouts and soy sauce.

Preheat a large browning dish on High for 4 minutes. Beat the egg yolks lightly and stir in the mushroom mixture. Beat the egg whites until stiff and fold into the mixture. Pour into the hot browning dish and spread out with a spatula. Microwave on High for 4 to 5 minutes, until cooked in the centre. Season to taste, fold the omelette over and slide onto a warmed serving plate. Serve immediately.
