This omelette was specially created for Arnold Bennett by the Savoy Hotel, in honour of his setting of a novel in the hotel.

To create this omelette, you will need :-

  1. three eggs
  2. four ounces of smoked haddock
  3. three ounces of mature cheddar cheese
  4. one small cooked potato, sliced

Whisk the eggs with milk and put in a hot buttered pan.add the haddock, sliced potato and cheese. Simple really.

For a really authentic meal, the North Stafford Hotel, opposite Stoke-on-Trent railway station still serves this today.
