The mung bean is the plant from which germinated shoots are allowed to sprout, creating the well-known beansprout widely used in east Asian cookery. The bean itself and its pods are also edible, although relatively tasteless and can be eaten either raw or cooked (usually boiled). The mung bean plant itself is a small bush, Vignia radiata which bears fruit annually: the bean pods are slender and light green.
