On a Macintosh running System 5 or System 6, MultiFinder was a version of the Finder which supported multitasking with applications as well as desk accessories. It did this by fooling the foreground application into thinking that all the other running applications were in fact desk accessories.

Since System 7, this foolery has been unnecessary.

Actually, MultiFinder became Finder in System 7, and the single-application version of Finder went away.

MultiFinder grew out of the pre-System 6 hack Switcher.
