This is a fast and easy recipe that is also gluten-free. These bars make a great any-time snack or after-dinner treat. Unless you don't heat your house, store them in the refrigerator.

You will need:

First combine the shredded coconut and the coconut oil in a sauce pan and melt oil over a low heat. Stir often so as to heat evenly.
Once the coconut oil has melted, add vanilla, salt and maple syrup. Stir everything in until the shredded coconut rehydrates somewhat with some of the oil. This will take about 5 minutes.
Once everything is mixed up well, pour into a 3 cup glass dish. Use a spatula to press down until it is packed firm. Refrigerate for at least one hour.

To cut into bars, use a sharp, hot blade. If the bars are stuck fast and won't come out easily, place the bottom of the dish in a shallow pan of hot water for a minute to loosen.
