It comes it the form of a glutanous sauce with three crucial properties.

Firstly, it has an amazing heat capacity.
Secondly, it specifically adheres to the roof of the mouth.
Finally, it is able to transfer heat energy to the roof of the mouth (or to the tongue) with high efficiency.

These burns to the mouth result in loss of taste/sensation to the tongue and shreds of skin peeling from the the roof of the mouth. An appropriate and rapid response to such a burn is usually inhibited by the degree of intoxication which is often associated with the desire for this type of food. Pop tarts are another notorious source of this evil stuff.
