Himono is Japanese dried fish. As Japan is an island country blessed with good fishing places, people have long been enjoying a rich harvest from the sea-fish, seashells, and seaweed. They have developed various ways of cooking and preserving them. Himono is one of the most commonly preserved foods.Many kinds of fish, some of them cut open, are generally salted, and in some cases seasoned with mirin(sweetened cooking sake), and dried in the sun or by electric heat. Himono, broiled just before it is eaten, is served as a side dish at a homely Japanese-style meal, or as a relish taken with sake.
