Gule Ærter (Split Peas, literally "yellow peas") is a traditional Danish soup. It has lost it's appeal somewhat during recent times, and is mostly eaten by the elders or farmers (most Danish farmers tend to be more traditionalist).

The recipe (serves 3-4 people):

The peas are put in boiled water to soften for 2-3 hours and are then boiled for 45 minutes and mashed. The parsley, carrots and celery are diced, the potatoes too, though in bigger sizes. The onions are put in whole.

Add the thyme and salt as you please and serve with white bread.
