Hmm.. A bit late for E2 Quest 5, but here's an excellent recipe:

For each portion, you need:

one upper leg (or a breast) of chicken
a handful of mushrooms, chopped in quarters
1/4 of an onion, sliced
1 clove garlic
a few (2-3) roma tomatoes (fresh or canned)
2 Tbsp white wine
1/4 cup heavy cream (NOT coffee cream!)
basil, dill, salt, pepper,and parsley to taste
Fettuccini

First, chop up the chicken into bite-sized pieces. If you are using an upper leg, include the bone - it adds flavor. Fry the chicken with the mushrooms and the onion and garlic. When the chicken is nice and roasted, add the tomatoes and the wine. Cover, simmer for 5 minutes. When the chicken is cooked through, remove the bones (if you added them in the first place), and add the heavy cream. If you use milk or coffee cream or half-and-half, it WILL curdle. So, make sure you use heavy cream! (or maybe sour cream). Season with the herbs, making sure not to bring sauce to a boil. Serve hot on fettuccini or rice.

Cooking time: approx 10 mins

Variations: For a seafood sauce, use a white fish and/or shrimp instead of chicken and omit mushrooms. Also add some green and red peppers and season with hot chilli sauce. Works best on rice, but also good on pasta.
