This is a very easy lacto-ovo vegetarian quiche.
1/2 cup Bisquick
8 oz. Ricotta cheese
1 cup milk
8 ounces of shredded cheese (any kind except mozzarella, parmesan, or romano)
one quarter cup of finely chopped onions (optional)
Preheat oven to 375 degrees. Grease pie pan (or 8-9 inch round or square casserole). Put spinach or broccoli in pan. Add half of the shredded cheese. Mix remaining ingredients and pour over top. Bake for about 25 minutes. May need to stand 5-10 minutes to set when done, depending on cheese selected.
Add 4 chopped large mushrooms to the mixture.
Add hot sauce to taste for a more flavorful quiche.
For non-vegetarians, add 3-5 strips of bacon, torn apart.
