This is a recipe that keeps me going through six hours of manual labor. I enjoy it every afternoon.

Ingredients

Dish:

1 large idaho potato, or 2 medium idaho potatos

5 cherub tomatoes

2 small frozen sausage patties

1 tbsp butter

2 large eggs

1 tbsp milk

Sauce:

1 tbsp sour cream

t tbsp salsa

 

Directions

(Bear in mind that since these steps frequently involve waiting a minute or more, one can be started while waiting for another to be completed.)

1. In a nonstick pan, melt butter on medium heat.

2. Place patties in pan. Heat 1 minute per side until patties are thawed and lightly browned. Remove from pan and set aside on the plate you will be eating from.

3. Dice potato into cubes, ideally 2 cm.

4. Place diced potato cubes in pan. Stir thoroughly, then stir a little bit per minute until cubes are golden brown on at least 1 side.

5. Combine eggs with milk and mix thoroughly.

6. Pour eggs into pan. Let sit for 1 minute, then stir a bit to break up what would otherwise become an omelete. We're going for scrambled here.

7. Let sit another thirty seconds, then stir once more. Remove from heat.

8. Slice cherub tomatoes in half lengthwise and place on plate with sausage patties.

9. Place potato-egg mix on plate, covering sausage and tomatoes.

10. To make sauce, combine sour cream and salsa. Then pour over food. If you don't like the taste, this dish also goes perfectly well with plain sour cream.

 

Serves 2 moderately hungry people and 1 very hungry person. As I said, it gets me through 6 hours of manual labor. Also, this dish is best eaten with chopsticks, because it is a stir-fry. A fork will also serve but not quite as well.

As for the sauce. I was going to call it Pink Sauce but some TikTok dumbass beat me to the punch with her Pink Sauce, which is...I don't think anybody besides her knows exactly what's in that stuff but don't eat it.
