Some of the best damn brownies I've ever had. They were generously made and given to my family by my chum as part of a Christmas basket of baked goods. She was kind enough to provide us with the recipe for this tasty treat.

Choco-Mint Brownies:

Yields 12



  1. Combine all ingredients in a large bowl and beat at medium speed in an electric mixer until all of the ingredients are well blended.
  2. Pour into a buttered and floured 8" * 8" * 2" baking pan. Bake on top rack of a 325 degree Fahrenheit oven for thirty to thirty-five minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool completely before cutting.

Note: If using a glass baking dish, reduce heat to 300 degress Fahrenheit to prevent burning.
