Cheese biscuits are a traditional part of the cuisine of the southern USA. They are simple to make, being a biscuit (often buttermilk), cut open, and filled with a big chunk of cheddar or pimento cheese. Or hoop cheese, or American cheese... localities and budgets differ.

These are usually made in fairly large batches, with a dozen or so biscuits set in an aluminium pan, cooked long enough that the cheese melts into a sea of greasy goodness, and cut into individual units consisting of one biscuit surrounded by enough greasy cheese that it doesn't matter that you used day-old biscuits. They are traditionally served wrapped in aluminum foil.

These are most commonly served for breakfast, but are popular at any time of day, and especially at community events (they are often sold at church yard sales or other fundraisers). There is general consensus that these are one of the best reasons to die at age 55 from massive heart attack.

Oh, yeah, also, some people just make biscuits with shredded cheese in the dough, and call those cheese biscuits. I don't know what's up with that.
