Very simple to prepare and incredibly tasty, this works well as a side dish or as the basis of a main course.

Ingredients:
2 C. basmati rice
3 C. water
4 tablespoons butter
1 onion, diced
1 t. salt

Melt the butter in a heavy pot. When it's hot (don't let it boil), add the onions. Saute until the onions are translucent, but not brown. Add the rice and saute for another minute or so. Pour in the water and bring to a boil, then immediately reduce the flame and cover tightly. Cook for 25 minutes.

Resist the temptation to peek at the rice before the 25 minutes is up. You'll let out steam and end up with some kernels of rice uncooked. If the lid to the pot you use doesn't fit tightly, put a layer of aluminum foil over the pot before putting the lid on.
