How to boil a lobster.

Bring 3 quarts of water to a boil with 2 1/2 tablespoons of salt. Lift the lobster by the back or tail and drop head first into the boiling water. Cover and count the cooking time from when the water returns to a boil. Simmer the loster 5 minutes for the first pound and 3 additional minutes for each additional pound. Do not over cook, lobster toughens and shrinks with overcooking.

Serve hot or cold with lemon butter sauce on the side for dunking.
